Great video. I make the slices for the center strip of bones before I remove the skin as its a little easier to hold onto to make the cuts and the meat isnt moving around.A fork also works well to hold onto the skin/tail when taking off the skin if you dont leave it connected to the fish.I need to get one of those Lindy gloves to save on my hands.
